Pumpkin Snickerdoodles


Pumpkin perfection. It is the Fall and holiday season which means you better have your pumpkin, cinnamon, and nutmeg on hand at all time! These are a perfect and light after noon treat. Very delicious! Mine didn't flatten at all (which I liked). They stayed in perfect little balls.
 In case you're not impressed with my picture, here is a better one that looks a little more convincing!


Ingredients:
1/2 cup Butter, softened
3/4 cup Sugar
2 large Egg
1/2 cup Pumpkin Puree
1/2 tsp Vanilla
2 cups Flour
1 tsp Cinnamon (I always use a lot more cinnamon than what's called for)
3/4 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Nutmeg, ground
1/2 tsp Ginger

1/2 cup Sugar
1 tsp Cinnamon (again, I used more)
Dash of Nutmeg

Directions:
Preheat oven to 350 degrees

1. Combine butter and sugar until fluffy. Add egg, pumpkin puree, and vanilla. Mix until smooth.
2. Mix together, flour, cinnamon, salt, baking soda, nutmeg, ginger, and salt. Slowly mix into wet ingredients. Mix until smooth.
3. In a small bowl, combine sugar, cinnamon, and nutmeg.
4. Scoop out small balls of dough. (Dough will be pretty sticky/ wet). Roll in sugar/cinnamon mixture, and place on a greased pan.
5. Bake for 9-10 minutes.
