This is a really good recipe. Every time I try to make a Mexican rice recipe from the internet, it never turns out quite right: it always burns on the bottom and is always too thick. I went to my in-law's house the other day and my mother-in-law and I combined our knowledge of Mexican rice and made this. It was so easy, and, so good, and turned out perfect. Another original for you to enjoy.
Ingredients:
1 cup Rice
2 1/2 cups Water
1 small can Tomato Sauce
1 Tbsp Cumin
1 1/2 tsp Garlic Powder
2/3 cup Chopped Onion
Salt
1 Tbsp Olive Oil
1 Bouillon cube, or 2 tsp Better than Bouillon
Directions:
1. In a large skillet, heat olive oil, and brown rice and onion for about 5 minutes. (This step can be skipped, just cook the onion with everything else).
2. Add water, bouillon, cumin, garlic powder, salt, tomato sauce. Bring to a boil. Reduce heat to low, and let cook for 20-30 minutes, or until rice is tender.
Enjoy!
