Tortellini Soup



I love pasta. That's why I originally wanted to make this. However, I didn't know if I would like it with the spinach and mushrooms in it, so I gave it a try anyways. It had good reviews. It is superb! I added a can of petite diced tomatoes, and a chicken breast to it, to make it a little more hearty. These additions were great.

Ingredients:
1 pkg dry Alfredo Mix
4 cups water
1 can Vegetable or Chicken Broth
Oregano, Basil, Salt, Garlic, and Pepper
1 cup Mushroom, sliced
1/2 cup Onion, chopped
1 Chicken Breast, chopped and shredded. (I boil mine)
1 pkg frozen, chopped Spinach
1 can diced Tomatoes
1 pkg frozen Tortellini
1 can Evaporated Milk

Directions:
1. Combine Alfredo mix, water, broth, mushrooms, onion, spices, and chicken. Simmer on low heat for 2 hrs. (You can make this a quick soup by cooking everything on medium heat and not letting everything simmer for awhile, but flavor will be better if you do!)
2. Add spinach, tomatoes and tortellini. Cook for about 15-20 mins over medium-low heat until tortellini is fully cooked. 
3. Stir in evaporated milk. You can serve immediately, or let simmer for about 5 more minutes so everything cooks together. (I ate mine right away).
