Ground Beef Enchiladas


I have been wanting some ground beef enchiladas for quite some time now. I have made enchiladas several times before, so I figured I could made these without a recipe. They turned out superb! I was pretty proud of myself. I think a lot of the recipes on this blog are recipes from other places, but this is 100% original, and just enough to feed a small family. 

Ingredients:
1 lb Ground beef
1tsp Chili Powder
1 Tbsp Cumin
Garlic Powder
Oregano
Basil
Salt and Pepper
1 small Onion, chopped
1 small can Olives, sliced
1 can Green Chilies 
2 cans red Enchilada Sauce 
5-8 Tortillas 
1 1/2 cups shredded Mozzarella Cheese 

Directions:
1. Preheat oven to 350.
2. Brown beef with onions, chili powder, cumin, garlic powder, basil, oregano, salt and pepper. Once brown, add olives green chilies, and a little enchilada sauce (just enough to cover the beef). Cook about 10 minutes longer on medium-low heat. 
3. Pour enchilada sauce over the bottom of a greased baking pan until the bottom is well covered. Spoon about 1/4 cup of beef mixture into a tortilla and roll up. Place tortilla rolled end down, in the pan. Repeat until all the beef is used. 
4. Pour remaining enchilada sauce over the top of the tortillas.  (I didn't use all of my sauce). Spread cheese over the top. 
5. Bake, covered, for 35 minutes. Remove foil and bake for 10 minutes, uncovered, until cheese is melted, and sauce is bubbling. Serve with Mexican rice and sour cream if desired.
