Spaghetti Carbonara


This was a really good recipe! I make one similar to it, but I don't have a concrete recipe for it. I made this the other night and it was a really quick recipe (15 minutes) and very delicious. I used half and half instead of whipping cream, and I added diced ham from the deli to it too because for some reason when I read the recipe I thought I read ham! We loved this and will make it again for sure.

Ingredients:
1/2 lb of Spaghetti pasta (I used Linguine Fini)
1/2 Tbsp of Olive Oil
1/4 lb Bacon, chopped
1/2 lb Ham, cubed
1/2 cup Heavy Cream (I used half and half)
2 Egg Yolks
1/2 cup grated Parmesan Cheese
Salt and freshly ground Black Pepper

Directions:
1. Cook spaghetti in a pan with salt until al dente.
2. Heat olive oil in a pan and cook bacon until brown.
3. In a bowl, whisk together cream, Parmesan cheese, egg yolk, salt, and pepper.
4. Once finished, drain pasta (DO NOT RINSE). Immediately, return the pasta to the pot and mix in the egg and cheese mixture. Add bacon and ham and toss with sauce and heat through gently (too high of heat will scramble the egg). Thin the sauce a little with more cream or milk.
5. Serve immediately with some fresh grated Parmesan!
