Easy Almond Roca


This stuff is easy to make, is only a few ingredients, and is highly addictive. I have made this twice this week (mostly to give away) but I find myself unable to stay away from it. It is a great balance of sweet and salty. I did a lot of baking today and made plates of goodies for friends. I have to say that I think that this was a very pretty and tasty addition. I topped mine with toasted sliced almonds. Yum!

EASY ALMOND ROCA

1 c. butter
1 c. brown sugar
40 whole saltine crackers
12 oz. pkg. semi-sweet chocolate chips
1/2-1 c. finely chopped nuts, optional

Lightly grease bottom of large jelly roll pan. Melt butter and sugar in saucepan. Bring to a boil and boil 2 minutes, remove from heat. Line jelly roll pan with 40 whole saltine crackers and pour sugar mixture over crackers to cover. Bake at 350 degrees for 5 minutes, until bubbling all over. Watch carefully. Remove and cover with chocolate chips. Let melt before smoothly spreading over crackers. Cover with finely chopped nuts. Refrigerate to harden.
