Chicken Lasagna Rolls


So, so good! This is a quick and easy lasagna recipe. Everything great about lasagna rolled up into individual portions. No more cutting and spilling layers of lasagna all over your plate. Also try adding your favorite ingredients -- spinach, mushrooms, onions, etc. A must try! 

Ingredients:
1 large chicken breast cooked and chopped
1/2 cups ricotta cheese 
1/8 cup Mozzarella cheese, or feta cheese 
1/8 cup Parmesan cheese  
1/4 cup milk 
Salt, pepper, oregano to taste 
6-7 lasagna noodles
Spaghetti sauce 

Directions:
1. Combine chicken, cheeses, milk, salt, pepper, and oregano
2. Cook noodles according to directions, drain and pat dry with a clean cloth or paper towel 
3. Preheat oven to 375 degrees 
4. Take a lasagna noodle and spoon a layer of cheese mixture onto the noodle. Leave a little room on each end of the noodle. Roll up from one end to the other. Place in a greased pan. Continue until all noodles and chicken mixture is gone. 
5. Top rolls with spaghetti sauce and a little mozzarella cheese. Bake, covered, for 30 minutes.
