I have a ton of raspberry bushes in my yard, and I needed a dessert that I could use them up with. I found this recipe. It is delicious. I took it over to some friends' house, and everyone loved it. Its a great, light, summer desserts, even though the summer is winding to a close.
Ingredients:
2 (10 oz) packages frozen red raspberries in syrup
1 cup water
1/2 cup sugar
2 tsp lemon juice
4 Tbsp cornstarch
1/4 cup cold water
50 large marshmallows
1 cup milk
2 cups heavy whipping cream, whipped
1 1/2 cups crushed graham crackers
1/4 cup butter, melted
1/4 cup chopped nuts (optional)
Cool whip
Directions:
1. Heat raspberries in 1 cup of water with sugar and lemon juice.
2. Dissolve cornstarch in cold water. Stir into raspberries and cook until thick and clear. Cool thoroughly.
3. Melt marshmallows in milk over boiling water. Cool thoroughly.
4. Whip cream, and fold into marshmallow mixture.
5. Mix cracker crumbs, butter, and nuts. Press into the bottom of a 9x13 pan. Bake for 10 mins at 350 degrees. Cool.
6. Spread marshmallow mixture over the crumbs. Spread cool raspberry mixture over marshmallows. Top with cool whip.
7. Refrigerate until firm.
