Creamed Corn


I love corn! Corn on the cob, corn off the cob, corn chowder.. I love it all. My new favorite is creamed corn. It is best with fresh corn off the cob, but I'm sure canned corn would be fine too. This is a great side for any main course you want to fix up.

Ingredients:
1 box frozen corn
1/4 - 1/2 cup milk
3 oz cream cheese, cubed
2 Tbsp snipped fresh chives
Salt and pepper to taste

1. In a medium pan, simmer corn and milk until corn is tender (about 5 minutes). Remove from heat, and stir in cream cheese, chives, salt and pepper. Stir until smooth.

2. Serve and enjoy!
