Peanut Butter Bars
These peanut butter bars are famous on Stan's side of the family. The way I came to have a copy of this recipe is a long story. It boils down to the fact that I had to bake 10 dessert for Stan's bro-in-law. We were doing a trade, of sorts. One of his requests were these peanut butter bars that he grew up eating at school. His mom, being a former lunch lady, had the recipe. After her digging it up, and getting me the recipe, I was able to make him the authentic recipe from his school lunchroom. Sound appealing? They're pretty good. I am not the first to run to something that is chocolate and peanut butter, but these are a huge hit among those who enjoy that combination.
Ingredients:
2 sticks butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 cup peanut butter
1 tsp. baking soda
1/2 tsp salt
2 cups flour (maybe a little more)
2 cups oats
Bag of semi-sweet mini chocolate chips
Cream butter and sugars. Incorporate eggs one at a time. Add vanilla. In separate bowl combine dry ingredients, except oats. Slowly add the dry mixture to the creamed mixture. Add oats last. Bake at 350 for 12-15 minutes. Take out and spread chocolate chips on top right away and allow to melt. Be sure they are melted completely before spreading evenly with a knife, because the bars will still be warm and soft and you don't want to tear it up. Allow to set. you may want to stick it in the fridge for the the chocolate to harden. Enjoy!
