My Mom's Lasagna
Ok, so this is IT! The recipe that I grew up on. The meal that is still most treasured among my family to this day. When my mom makes this, she makes about 4 HUGE pans of this stuff and we eat it for days. We all know the smell of this lasagna being made. It is a smell that brings me back to my childhood...the sausage...the spinach. It is really good....all but the mushroom soup. I hate mushrooms. I sometimes add ricotta to substitute for the mushroom soup. But, if you like mushrooms keep this recipe just as it is. It is perfect!
1 lb. ground round
1/2 lb. sausage
salt and pepper
2-3 Tbsp. worchestershire sauce
1 Tbsp. oregano
1 package frozen chopped spinach
Cook meats with seasonings- add frozen spinach. Add oregano and worchestershire sauce. Cook a few minutes more
Combine and set aside:
1 pint sour cream
1 can cream of mushroom soup
Open 2 cans tomato sauce
Grate and set aside 1 lb mozzarella cheese
Boil 1 box lasagna noodle with 1 Tbsp. oil to prevent sticking.
Grease large 13x9x2 baking dish.
Arrange:
1/2 cooked noodles (make sure they are patted dry to prevent a soupy lasagna)
1/2 meat and spinach mixture
1/2 grated cheese
1/2 sour cream and soup mixture
Repeat using other half of ingredients.
Dribble 2 cans tomato sauce over top. Sprinkle with Parmesan cheese.
Bake at 350 for 35-40 minutes
Let stand 15 minutes before serving....if you can wait that long.
I might be making this soon. Writing this up made me really crave this.
