
Every conference Sunday, the Denison famiy has over a bunch of us for breakfast. It is a great tradition that we love. We all bring a dish to share. I always hate bringing a dish to a gathering that is barely touched, and then having to bring it home. Luckily, this was all but gone when it was time to leave. It took about 10 minutes to put together and was really good. All my Utah friends like to call a dish like this "funeral potatoes". But, here is the South we call it hasbrown casserole, which is what it really is. I think I have a funeral potato recipe on here as well, and it is pretty similar. Either way, both dishes get gobbled down. Who can really pass up some cheesy potatoes?
Ingredients
1 (2 pound) package frozen hash brown potatoes, thawed
1/2 cup butter, softened
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup chopped onion
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
Directions
Preheat oven to 350 degrees F (175 degrees C). Spray one 9x13 inch pan with non-stick cooking spray.
In a large bowl, combine the potatoes, butter, salt, pepper, onions, soup and cheese. Gently mix and pour into prepared pan or dish. Bake uncovered for 35 minutes.
