Awesome Key Lime Pie



This past weekend, Stan and I participated in a pie baking contest. I love baking pies. For the competition I actually tried recipes that I had not made before. I made a peaches and cream pie (which probably won't make the blog) and I "asked" Stan if he would make a key lime pie that I had found a recipe for. His key lime pie won "Best All Round", and deservedly so. It was so good....and easy. It can be made even easier if you want to omit the toasted coconut from the crust, but the goodness of this recipe is really highlighted in the unique graham cracker crust.

Crust:
1 cup graham cracker crumbs
3T sugar
1t ground ginger
1/4c toasted coconut (put on metal pan in oven at 375 for 20 min. stirring occasionally)
5T melted butter

Throw all these ingredients in a food processor and blend up until the coconut is incorporated well. Lightly press into a pie pan.

Filling:
4 egg yolks
2 cans sweetened condensed milk
3/4 cup key lime juice (I bought a bottle of key lime juice at the store.)

Mix filling ingredients and pour into graham cracker crust. Bake at 375 for 15 minutes. Cool and serve with whipped cream.
