My sister, Tricia, is my ultimate baking buddy. We have spent much time in the kitchen together and we got to do some baking when she was out here over Christmas. She introduced me to this recipe. We looked all over the stores here to fine mini-reese's pieces, but had not luck. We used regular Reese's Pieces and mashed them up. Tricia went home and found some at her local Wal-mart and was kind enough to mail me a couple of bags. Thanks Trish!
These cookies are not overly sweet. I like to blend my oats to the consistency of flour so it has the great oat flavor without being too chunky. These are so good!
Ingredients
* 2/3 cup shortening
* 1/2 cup packed light brown sugar
* 1/3 cup granulated sugar
* 1 egg
* 1/2 teaspoon vanilla extract
* 1 cup all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 2 tablespoons milk
* 1-1/2 cups rolled oats
* 1-1/3 cups (10-oz. pkg.) REESE'S MINI PIECES Candy
Directions
1. 1 Heat oven to 350°F. Lightly grease cookie sheet or line with parchment paper.
2. 2 Beat shortening, brown sugar and granulated sugar in large bowl until fluffy; beat in egg and vanilla. Stir together flour, baking soda and salt; add alternately with milk to sugar mixture. Stir in oats and candy pieces. Drop by scant 1/4 cupfuls or #16 scoop onto prepared cookie sheets.
3. 3 Bake 12 to 15 minutes or until lightly browned. Cool 10 minutes on cookie sheet. Remove from cookie sheet to wire rack. Cool completely. About 1 dozen cookies.
