Craisin Pecan Chicken Salad
I love to use a rotisserie chicken for this recipe since it is already cooked and so flavorful. I also usually substitute some of the mayo with a low-cal ranch dressing.
Ingredients
6 oz. Boneless Skinless cooked Chicken Breast, chopped
1/4 C Celery, diced
2 Tbsp Craisins (dried cranberries)
2 Tbsp Pecans, diced
1/2 tsp Poppy Seeds
3 Tbsp Fat-Free Mayo
Salt & Pepper optional or to taste
Directions
Mix all ingredients in a bowl. Divide in half and spoon into pita bread with lettuce and tomatoes or serve over a green salad.
