Walnut Crusted Chicken

If I had a secret recipe that I would maybe be hesitant to share with people, this would probably be it. This chicken is so dang good. Besides the crust being absolutely amazing, I think the secret to this is pounding the chicken thin. It cooks really quick and the crust keeps it nice and moist. If you don't try any other recipe on my blog...TRY THIS ONE!! I made this for a friend after she had her baby and I did not hear the end of how much they loved it. I dream about this chicken at night, I love it so much!
Walnut Crusted Chicken
1/8 t Cayenne Pepper
1/2 t Salt
1/4 t Pepper
1 Large Egg White
1 t Dijon Mustard
1/2 C Panko Bread Crumbs (Don't you use that regular stuff...get the Panko!!)
1/2 C Finely Chopped Walnuts, toasted and cooled.
1/4 C Chopped Parsley
1 1/2 lbs Chicken Breast, Pounded Thin
Combine cayenne pepper, panko crumbs, salt & pepper, walnuts, & parsley in a shallow dish. In another dish, whisk egg white & dijon mustard together. Dredge each breast into egg mixture and then into panko mixture. Place chicken onto a sprayed baking sheet. Bake 10-12 minutes @ 450.

Ha. Ha. That friend was me! I made a version of this dish tonight, however, I used chicken thighs. It was delish:)
